Ping has nothing to do with how fast your computer draws images on your screen, and has everything to do with the network environment. It could theoretically decrease your framerate, but unless you have a very old graphics card, this shouldn't be an issue.
So unless your performance get really bad at the higher resoultions, then feel free to use them.
